Grilled cheese dreams

In college I had a grand plan to open a gourmet grilled cheese breakfast/lunch spot where I would offer grilled cheeses made of locally made cheeses and produce on house-made breads. Think havarti and grilled portebellos sandwiched between two thick slices of raisin walnut multi-grain bread.  There would also be four homemade soups on the menu, made of the season’s finest crop.

I obviously bagged the idea and went into graphic design – so imagine how excited I was when I came across this food truck on 30A (Seaside, Santa Rosa Beach, FL)! Check out the menu — pure perfection.

I’m inspired to add a grilled cheese night to our family’s menu plan…
